No. 4's Chef Mike Clarke is the former chef of Terre Rouge Bistro Marche in PEI. He studied culinary at Holland College and has battled it out and has been victorious in competitions worldwide. Mike knows how to appeal to all of the senses with his cuisine. Bold flavors, colors and visuals as he treats his ingredients with the respect they deserve. Every bite is better then the last.

First Course

Scallop & Spaghetti Carbonara 

Fresh pasta, No.4 pancetta, egg yolk, Parmesan 


Second Course

Duck Trio

Seared breast, confit thigh, liver mousse

Braised beluga lentils, roasted purple cabbage, sautéed greens, pickled turnips, partridgeberry jus 



Lemon and pineapple weed creme pot, blueberry jam, pistachio biscotti
